There is nothing better than homemade pâté, which you prepare yourself and know exactly which ingredients it contains. In this way, you will not only achieve better quality than purchased pâtés, but above all an absolutely perfect taste that will suit your palate. And if you are not a fan of offal, you can easily replace it with classic meat. Use a recipe that will take you almost no time and you will be able to conjure up pate in the kitchen literally in a few minutes.

Christmas homemade liver pate
First, melt 50 g of butter in a pan, then add 600 g of skinned and cleaned chicken liver and fry it so that it remains pink inside and does not harden. Transfer two-thirds of the roasted liver together with the pastry to the container in which you will later mix the pâté. Cut the remaining amount into smaller pieces.
At this point, heat 25 g of butter in a pan, add 150 g of shallots cut into half rings and let them vitrify. Season lightly with pepper, add ½ tablespoon of finely chopped thyme leaves, as well as the same amount of chopped sweet-leaf parsley, and fry for another minute. Then pour in 25 ml of white wine vinegar, let it boil completely and then add 100 ml of white port or other dessert wine and let it boil for a while.
In another container, melt 175g of butter and pour it into the container with the liver and pastry, also add the fried shallots with spices and 2 anchovies, wiped and boneless. Mix all the ingredients until smooth. Sprinkle pre-cut pieces of liver, again ½ tablespoon of fresh thyme leaves and parsley into the mixture and season with salt and pepper as needed. Mix all the ingredients properly.
How to serve
Divide the soft pâté into small portions and cover each portion with a little melted lard. Best served with fresh bread or a baguette. Of course, cranberries are an excellent addition.
